What’s Cooking: Chicken Pot Pie Turnover

The other day I made chicken pot pie. It was absolutely delicious. I used a variety of fresh veggies and a store bought roast chicken. I hardly ever roast my own chicken these days since you can get a juicy slow roasted one for the same price as one uncooked. Plus now that I have been slowed down by the pregnancy I don’t have the energy to make every single thing from scratch….this isn’t top chef or anything.

Although I carefully planned out the dinner, I still had a fair amount of pot pie filling left over. After sitting in the fridge for a few days I figured I better do something with it or it would go into food purgatory.

FOOD PURGATORY: Left over food that sits in a refrigerator for days either forgotten or dismissed for a fresher meal.

Anyway…I am not giving the recipe in this post because I am actually trying to create a little cookbook of sorts…so unfortunately I will only be posting pics. I wish this blog had a sniffing mechanism because the smell of fresh pastry and bubbling pot pie on a cool  Fall day makes me feel so warm and cozy inside.
