What’s Cooking:The Thanksgiving Leftover Sandwich
Last Thanksgiving when I was still a Miss, I grew tired of reheating leftovers day after day. One day, I was watching the Food Network and they were featuring Thanksgiving sandwiches. I thought,
“This is such a clever idea.”
“I think I’ll try it!”
So I threw together all the leftovers except the veggies. Yup, that includes the stuffing and mac and cheese! I put it all on a toasted kaiser roll with rosemary butter and cranberry sauce. I then presented this monstrous sandwich to my Dad, and he liked them so much he had them for lunch the next three days. This year, I told Chris about the sandwich, and from the moment I mentioned it, he was eager to have it. As I proudly presented my Thanksgiving Dinner – The Sequel to him, I thought,
“So this is how traditions start.”
It’s amazing how the simplest of ideas can turn into something your family looks forward to for years to come.
